The whole place is pretty "authentic," so it pleases me to hear that the beans and rice are animal-free. I am a vegan as well, so I picked up a burrito identical to Robert's: Vegetarian burrito with no cheese or sour cream, extra avocado.
The foil wrapped food-baby was decently sized and the tortilla was freshly steamed (though i prefer grilled). While refried beans are the way to go, their whole pintos were flavorful as were the other well-integrated ingredients: rice, salsa fresca, and avocado. I think the salt level played a large factor in regards to the flavor level, but that didn't bother me. I prefer more spice but it was definitely a tasty specimen: not too wet, not too dry, not too greasy. The chips were decent, thought the salsa bar was lackluster. Costing me about $4 or $4.50, I might go to Guadalajara a few blocks away, but its not too shabby at all.

There are a lot of greasy hole-in-the-wall burrito/Mexican food joints on this strip. This place seemed to be the only one which had the word "vegetarian" on the menu and therefore qualified for me. (It also had soccer blasting on the wide-screen TVs, so we knew it was authentic :-) .)
I ordered the regular burrito, no cheese, no sour cream (vegan) with extra avocado. The burrito came in a plastic basket wrapped in foil ready-to-eat. It came with whole pinto beans (sadly, not refried), rice, lettuce, mild salsa fresca, and (as requested) avocado. There was a mini salsa bar with rancho, fresca, verde, and picked jalapenos. The salsas were incredibly salty and only added to the already salty burrito; I found it was better to eat the burrito without the salsa offerings. The chips were equally salty and greasy.
